Feel Like Makin' Whoopie....Pies?
My mom in law gave me a hard time last night for neglecting my blog. So this one's for you Renè
I couldn't resist trying this recipe using my leftover pumpkin from the Pumpkin Chocolate Chip Cookies.
Pumpkin Whoopie Pies - Recipe from Bon Appetit
Ingredients
FILLING
- 1 cup powdered sugar, sifted
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 7-ounce jar marshmallow creme
- 2 teaspoons maple extract
CAKE
- 3 cups all purpose flour
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3/4 teaspoon ground nutmeg
- 3/4 teaspoon ground cloves
- 6 tablespoons (3/4 stick) unsalted butter, room temperature
- 3/4 cup (packed) golden brown sugar
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 15-ounce can pure pumpkin
- 1/2 cup milk
- Nonstick vegetable oil spray
Preparation
FILLING
- Using electric mixer, beat sugar and butter in large bowl until fluffy, about 2 minutes. Add marshmallow creme and maple extract; beat until blended and smooth. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature.
CAKE
- Sift first 7 ingredients into large bowl. Using electric mixer, beat butter and both sugars in another large bowl until blended. Gradually beat in oil. Add eggs 1 at a time, beating to blend between additions. Beat in pumpkin. Add dry ingredients in 2 additions alternately with milk in 1 addition, beating to blend between additions and occasionally scraping down sides of bowl. Cover and chill batter 1 hour.
- Arrange 1 rack in bottom third of oven and 1 rack in top third of oven; preheat to 350°F. Line 2 baking sheets with parchment; spray lightly with nonstick spray. Spoon batter onto baking sheet to form cakes (about 3 level tablespoons each; about 12 per baking sheet), spacing apart. Let stand 10 minutes.
- Bake cakes until tester inserted into centers comes out clean, about 20 minutes, rotating sheets halfway through baking. Cool cakes completely on baking sheets on rack. Using metal spatula, remove cakes from parchment.
- Line cooled baking sheets with clean parchment; spray with nonstick spray, and repeat baking with remaining batter.
- Spoon about 2 tablespoons filling on flat side of 1 cake. Top with another cake, flat side down. Repeat with remaining cakes and filling. DO AHEAD Can be made 8 hours ahead. Store in single layer in airtight container at room temperature.
Warning these are decadent. I'm sure you can see that from the amount of butter involved. We're not winning any health awards here.

Pumpkin Chocolate Chip Cookies
Here's the recipe from George Duran of the Food Network:
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup white sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup canned pumpkin puree
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 cups (12-ounce bag) milk chocolate chips, not semisweet
- Nonstick cooking spray or parchment paper
Directions
Heat the oven to 350 degrees F. Spray cookie sheets with nonstick spray or line them with parchment paper.
Using a mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until the mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly beat the flour mixture into the batter in thirds. Stir in the chips. Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.

Under the weather....but feeling better
The Clark household was sick last week. Yuck. I don't know about you but when I'm sick I'm miserable and want nothing but a cozy sofa, many blankets and the TV remote. When Rich is sick he becomes superman and cleans every inch of the house killing any and every germ, bacteria, virus - whatever. While I'm not complaining about his cleaning, it really interferes with my miserableness and naps and Design on a Dime.
Anyhoo - we're just about back on track and ready to face the week. I hope you all had a lovely weekend. I left the house for a bit yesterday for a fun family portrait session. Here's a little teaser. 4 adorable sisters. So fun, so stylish and so very SoCal.

Photographers have the best offices
Another new favorite blog o' mine is The Savvy Photographer. It's overloaded with tips, tricks and TONS {and tons} of inspiration. One of my favorite features is when they introduce a new photographer, ask them a bunch of great questions {I can't even tell you how much I've learned in the short time I've been following this blog} and then they ask these awesome photogs to show us a peek at their studios/work spaces.
Apparently if you're an amazing photographer you automatically come with an eye for fantastic interior design. I've got my work cut out for me...

So you're sayin' there's a chance!
I see a light at the end of the housing tunnel. Someone out there accepted on of our five bazillion offers! Can you believe it?!?! It's a short sale so I'm not even holding my breath but I do feel as though this is putting us one step closer to our new home.
So with this new turn of events I'm back to browsing the design blogs {I had to put them on the shelf for awhile - it was too painful}
I stumbled across this post from Desire to Inspire who introduces us to South African {yay!} photographer, Justin Patrick {this is funny to me because my brother's name is Dustin Patrick} Justin has an incredible portfolio filled with lots of goodies. Check it out.

It's { Monday }
Do you have the day off? I don't. Happy Monday if you do. How was your weekend?
It's about 68 degrees outside and everyone {myself included} is walking around in Uggs and sweaters. It's a little hilarious. But I love it.
We went to Pearl Jam on Friday night. UH-mazing. It was like church. In the south. Amen.
To continue on my little baking kick - I made chocolate chip cookies last night and they turned out awful! They tasted fine but they fell flat. Literally. {Sigh}
I want a pair of Hunters. Especially since it may rain tomorrow. Lynne and I decided we'd buy them for each other so when our husbands ask "Did you go shopping" we can truthfully reply "Nope! Lynne/Shelby bought them for me!"
And lastly, Mr. Clark brought home a new toy for me. Editing will never be the same {or take nearly as long} Love that man!
